Paper Cup Frozen Salad
2 cups sour cream
2 Tablespoons lemon juice
1/2 cup sugar
1/8 teaspoon salt
8 oz can of crushed pineapple, drained
1 or 2 diced bananas
red food coloring (if you want)
1/2 cup chopped pecans (if you want)
16 oz can pitted bing cherries, drained
Drain pineapple and cherries. Cut cherries in half. Mix every thing together in a big bowl. Spoon into paper cups in a muffin pan. Freeze. Remove paper cups from muffin pan and store in a ziplock bag.
Take out of the freezer 15 min before you want to serve so they can soften up.
Makes 12 to 18 cups.

Desi's Creamy Chicken Tacos
4-6 Boneless, skinless chicken breasts
1 package taco seasoning
16 oz salsa
1/2 cup minute rice
8 oz sour cream
optional: black beans
Put chicken in crock pot, sprinkle taco seasoning on top and cover with salsa. Cook on low 6-8 hours. One hour before serving - shred the chicken. Use two forks and it will just fall apart. Add in rice and sour cream and black beans if you want. Stir and cook the last hour.
To serve: put on a tortilla with cheese, lettuce, tomato.
This makes a ton and is easy to freeze.
